If you prefer something other than an Omelette or a full English breakfast, why not try this delicious crumpet with bacon caramelised bananas? At one of the establishments I worked at, we had this on the venue’s breakfast menu, but personally, for me, this is rather a breakfast option for the family home rather than a venue. If you do not sell enough of this particular breakfast, you will sit with a wastage of the batter. For me, and hopefully others too, it is not the same using yesterday’s batter. This crumpet with bacon and caramelised bananas are the perfect Sunday breakfast for your hungry family, they will just love it! The poppy seeds in the batter add extra texture and you will win some brownie points for being creative!
Ingredients:
CRUMPETS BATTER
- 1 cup flour
- 1 teaspoon baking powder
- 1 Tablespoon sugar
- pinch of salt
- 1 egg
- 2 Tablespoons oil
- 6 Tablespoons milk
- 1/4 cup water
- 1/4 cup poppy seeds
BACON AND BANANA
- 2-3 slices of crispy streaky bacon per person
- 3 bananas, peeled and cut length ways
- 1/4 cup brown sugar
- 3 Tablespoons butter
- 1/4 teaspoon ground cinnamon
- honey or syrup to drizzle
Instructions:
CARAMELISED BANANA
- Heat the butter on low heat and add the brown sugar and let cook to make a lovely caramelised sauce-be careful not to burn the sauce.
- Add the cinnamon and the bananas and cook for 1-2 minutes until the bananas are warm and heated through.
- When the sauce has thickened, spoon over the bananas to cover them.
- Use the rest of the sauce to garnish the plate when adding the banana.
CRUMPETS:
- Sift the flour, baking powder and salt together, Add the sugar.
- In a separate bowl, whisk the egg, oil and milk and water together.
- Add the liquids to the sifted ingredients and whisk well to ensure there are no lumps in the batter.
- Add the poppy seeds and whisk again.
- Heat oil in a saucepan and bake spoon fulls (about 2 tablespoons) of crumpets on low to medium heat until bubbles form.
- Flip them around and bake further for up to 1 minute until golden brown but cooked.
BACON
- Crispy fried bacon fried in oil or topped under salamander to grill
ASSEMBLING
- Place about 3-5 crumpets on top of each other and balance them well(you can add bit of cream cheese between them to let them stick).
- Top with the crispy bacon.
- Place the banana next to the crumpets or on top and spoon some sauce over.
- Drizzle sauce, honey or maple syrup over the top and serve.
