Thai Fish Cakes
SERVES 4

INGREDIENTS

500gms of either salmon or ocean trout Golden Door Thai Fish Cakes
1 ½ tbsp. Thai yellow curry paste
1 spring onion sliced fine
1 tbsp. chopped coriander
1 tsp lemon grass chopped fine
½ Thai chilli, seeded and chopped fine
1 lime (zest and juice)
Salt and pepper to taste

METHOD

  1. Pre heat oven to 180 degrees.
  2. Place fish in a food processor and mix until coarsely chopped. Take care not to over mix.
  3. Place in a bowl and add all other ingredients and mix thoroughly.
  4. Shape into even patties and place on a lined baking tray.
  5. Bake in the oven for 12 minutes.

CABBAGE SALAD

INGREDIENTS

1 punnet of heirloom cherry tomato’s cut in half
1 Lebanese cucumber julienned
1 ½ cups of sliced red cabbage
1 ½ cups of sliced Wombok cabbage
3 spring onions sliced
½ a finely sliced Spanish onion
2 medium carrots julienned
1 ½ cups of rice noodles (optional)
¼ of a bunch of chopped Coriander
¼ of a bunch of chopped mint leaves
1 fresh mango chopped in 1cm dice
½ cup roasted peanuts

METHOD

Mix all ingredients together in a large bowl except the mango and peanuts.
Place the salad onto the plates and garnish with the fresh mango and peanuts.

Thai Fish Cakes

Serves: 4 peoples
Cooking time: 12 minutes

Ingredients

  • 12-ounces of whatever kind of pasta you like!
  • 3-4 cups shredded kale
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Squeeze of lemon juice if you have it

Instructions
