Thirteen minutes. That’s roughly how long it takes from the beans going into the pan to a plate landing in front of someone at my place, egg and all, assuming the bread’s already in the toaster and nobody’s hunting for shin pads under the couch. I’ve timed it more than once, mostly out of curiosity about whether this was actually faster than cereal plus the inevitable second bowl. It is, just, and it holds you until well past morning recess, which cereal never manages in this house.

Breakfast beans on sourdough with a soft egg is the sort of meal I’ve come to lean on hard through winter. It’s not clever. It’s beans, tomato, a few pantry staples, good bread, an egg cooked soft enough that it runs into everything else. But it’s high in fibre, it reheats from the fridge without turning to mush, and it gives me something to put in front of three different appetites without cooking three different breakfasts.

Why this combination earns its spot on a weekday table

Tinned beans get a bit of a flogging in conversations about “real” cooking, as if anything from a can is automatically lesser. I don’t buy that. A tin of cannellini or borlotti beans is one of the cheapest, most reliable sources of fibre and plant protein you’ll find in an Australian supermarket, and if you’re after the broader argument for why fibre deserves more attention than it gets, I wrote about that at length in why fibre matters more than most of us think. The short of it: most of us are well under the recommended daily intake, and breakfast is often the easiest meal to quietly fix that, because nobody’s precious about what goes in a bowl before 7am.

The soft egg does two jobs. It adds protein, obviously, which keeps this from being a carb-only start to the day. But it also acts as the sauce. Run a fork through a just-set yolk and it binds the beans and toast into something that eats like it took more effort than it did.

What makes it genuinely make-ahead

The bean mixture keeps for four days in the fridge in a sealed container, and it actually improves on day two, once the tomato’s had a chance to sit with the garlic and smoked paprika. I make a batch on Sunday most weeks, enough for two or three breakfasts, and reheat a portion in a small saucepan while the toast is going. The egg is the only part that has to happen fresh, and a soft egg from a cold start takes about six minutes, which is manageable even on a morning when I’m also trying to find a missing netball bib before the 8am game.

If I’m honest, I think a lot of make-ahead breakfast advice overcomplicates things with elaborate meal-prep containers and colour-coded days of the week. This one doesn’t need any of that. One container, one pan, one egg. That’s the whole system.

The version I actually make in Newcastle

I buy my sourdough from a bakery near Darby Street when I’m organised, and a supermarket loaf when I’m not, and honestly the dish survives either. What matters more is that the bread’s sturdy enough to hold its shape under a ladle of beans without turning to paste in ninety seconds, which thinner sliced bread tends to do. A thick-cut sourdough, toasted properly dark, is the better vehicle here.

My youngest treats tomato-based anything with deep suspicion, so for her I hold back a portion of beans before I add the chilli flakes and let her have hers plain with just the paprika through it. It still counts as the same breakfast, more or less, and I’m not running a separate kitchen for one opinion at the table.

Ingredients

  • 2 x 400g tins cannellini or borlotti beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 small brown onion, finely diced
  • 2 cloves garlic, crushed
  • 1 tsp smoked paprika
  • 1/4 tsp chilli flakes (optional, serve on the side for little ones)
  • 1 x 400g tin crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp apple cider vinegar
  • Sea salt and black pepper
  • 4 thick slices good sourdough
  • 4 eggs
  • Handful flat-leaf parsley, roughly chopped
  • Extra virgin olive oil, to finish

Method

  1. Heat the olive oil in a saucepan over medium heat. Add the onion and cook for 4-5 minutes until soft, then add the garlic, smoked paprika and chilli flakes if using, and cook for a further minute until fragrant.
  2. Add the crushed tomatoes, tomato paste and beans. Stir well, then half-fill the empty tomato tin with water and add that too. Bring to a gentle simmer.
  3. Cook uncovered for 12-15 minutes, stirring occasionally, until the sauce has thickened and the beans are starting to break down at the edges. Stir through the vinegar, then season with salt and pepper.
  4. While the beans finish, bring a small saucepan of water to a gentle simmer for the eggs. Crack each egg into a cup first, then slide it into the water. Poach for 3 minutes for a properly soft, runny centre.
  5. Toast the sourdough until well coloured and sturdy.
  6. Spoon the beans generously over the toast, top each with a poached egg, scatter with parsley and finish with a drizzle of extra virgin olive oil and a crack of pepper.

Serves 4.

A lunchbox note and a reasonable swap

This doubles well for lunchboxes in an odd, specific way: the bean mixture on its own, cold, in a small thermos, with toast fingers on the side, has gone down fine with my middle one more than once. It’s not a conventional lunchbox item and I wouldn’t claim it suits every kid, but if you’ve got a fibre-resistant eater at home, sneaking beans in via a format they already trust (something warm in a thermos) is worth a try.

For a version with more vegetables through it, stir a couple of handfuls of baby spinach through in the last two minutes of cooking, or follow the logic in spinach and ricotta baked eggs for slow Saturday mornings if you want a baked, oven version for a weekend when you’ve got more time. And if eggs on toast is already in heavy rotation at your place, this sits nicely alongside smashed avo with dukkah and poached egg as a rotating pair through the working week, so nobody’s eating the exact same breakfast five days running.

Getting the egg right without the fuss

I used to swear by the vinegar-in-the-water trick for poaching, and it does help the white hold together, but I’ve mostly stopped bothering. A fresh egg, a gentle simmer rather than a rolling boil, and a cup to lower it in gently gets you there without the vinegar tang lingering in the water. If poaching four eggs at once feels like one thing too many on a weekday morning, a soft-boiled egg (six minutes from room temperature, straight into an ice bath after) does nearly the same job, peeled and halved on top of the beans instead.

The CSIRO’s dietary guidelines point to a combination of wholegrains, legumes and protein at breakfast as one of the more reliable ways to manage hunger and energy through the morning, and this dish ticks most of that without reading like a nutrition pamphlet. Nutrition Australia’s guidance on fibre intake is worth a look too, if you want the numbers behind why beans at breakfast aren’t just a nice idea but a genuinely useful habit.

I’ll admit this isn’t a dish that photographs as neatly as some of the smoothie bowls doing the rounds, and I’m not fussed about that. It eats better than it photographs, which is the trade I’ll take most mornings.
